Tibs - category
Sauteed chunks of strips of Poultry, Lamb or Beef. The meat is usually marninated in Ethiopian marinate sauces that contain rosemary, tomatoes, green jalapenos and more.
"Another category of Ethiopian dishes, simpler but wonderfully tasty, is tibs, grilled or sautéed meats-usually lamb or beef-prepared with onions, qarya peppers, or jalapeños and often a few sprigs of rosemary. "Special tibs" may be prepared with wine, tomatoes, or other ingredients. Normally, tibs of any kind is accompanied by a small dollop of the hot-red-pepper paste known as awazé, into which the diner dips every injera-wrapped morsel."
